Lind & Lime, Scotland

Named after James Lind, an Edinburgh native and until recently, a relatively unheralded doctor and scientist who worked on the HMS Salisbury. It was on this boat that he performed some of the first scurvy prevention trials - using lime to boost vitamin C intake, the first step towards adding lime to gin.

Skip forward nearly 500 years and Lind & Lime is distilled at the foot of Leith Walk in the historic Leith Distillery. Using a backbone of juniper and with a twist of pink peppercorns and you guessed it; lime. The lime used is mainly from the skin and pith of the fruit this gives the gin a more zesty, crisp flavour as opposed to a fruit gum confected taste.

The overall result is a balanced London Dry gin that proves sometimes simple is best.

We topped March's box with three types of London Essence Tonic Water, Scotland's national drink; Irn Bru & Hong Kong's very own Conspiracy Chocolate which used pink peppercorn in this expression to bring out the unique botanicals of Lind & Lime.
