Yukon Brewery, Yukon, Canada

Yukon Brewing started life in 1997 as Chillkook Brewing Limited named after the famous golf rush of the Yukon. The first aim of the brewery is to provide great drinks (and jobs) to an under served part of the world.

In 2009 Yukon laws changed enabling the brewery to add small batch artisan craft spirits to their portfolio.

The gin itself used Canadian Wheat spirit for a base, with traditional botanicals infused using a variety f methods including; maceration, vapour infusion and the London Dry method of steeping. Filtered Yukon water is added at the end to dilute the product and add a crisp soft mouth feel to the final product.

As soon as you sip it, you are greeted with a rich mouthfeel with great pop of spiciness, wood and juniper. The end builds into big citrus (particularly lemon), a light earthiness and loads of spiciness. This month’s box includes one of Yukon Brewing’s selzter, a beer (to go with the recommended cocktail) and a tonic from East Imperial.

Fact of the month: if Hong Kong had the same population density as the Yukon there would be fewer than 100 people.
